Q: Why are capacitors c1-c7 missing from kits? and they don't appear on the finished? boards in the photos.

Just a guess, but are they in parallel with other caps? They might be for fine tuning. Or if the parallel cap is of a value that is sometimes hard to get, but can be closely approximated by paralleling 2 capacitors.

Q: I noticed in the pictures it has the smaller coaxial connectors to the larger ones that come with it work?

It comes with both SMA connectors and also so-239 connectors to fit standard PL-259 plugs. You can install either type when assembling.
