Will this product remove sheet rock / drywall staining on a dark colored Mapei grout?

Yes it will. But remember that you are dealing with a acid product. Mix it weak to start with and do not allow it to come into contact with metal.

Will this product work well on an epoxy grout?

A qualified yes. I don't have epoxy grout. I do have an epoxy shower pan and it is the only thing I've found that will clean it back to new. Nothing says the two epoxies are the same chemistry though. I use it with a very stiff power brush on a drill at a very slow speed; it's effective on the shower pan as well as the traditional cement grout on the tiles.
