what is the maximum depth of the cut? ... in mm please

I am sorry I don't know the depth of the cut. I use this for cutting squares for quilting and I often cut through 5 or 6 layers of cotton fabric at a time without any problem. I am not sure that this helps you but you MAY be able to judge the depth by my answer.

Hard plastic but is comfortable to hold and use

How do I release the safety button?

Have to say it's rather random pushing the Lock button across and then pulling the arms open with finger nails to bring out blade - push button back across to lock. Not brilliant but works when you can get the blade out & locked
