I really don't know..go to swiss colony website might have that info..I love this cheese has a very mild taste and no after taste..hoped that helped..

I don't know if it is required to be refrigerated, but I refrigerate all types of cheese I buy for it lasts longer. Some cheese I buy I vacuum in plastic or a vacuum container and then refrigerate it.

How is the cheese kept cold?

I just keep in refrigerator and have had no problem even after weeks. iF YOU mean how was it kept cold during shipping,it wasnt. It was shipped in wood shavings in a decorative box. I live in fla and again no problem upon arrival.
