Best Japanese Kitchen Knife Kiya 4 3/4 inch Paring Knife No.170 - Professional, Japanese Stainless Steel

I have the same size Kiya knife that I bought in Tokyo in 1989. The 1989 blade measures 2.2mm thick. The new Kiya blade measures 1.4mm thick. The new, thin blade is much more prone to flexing. The weight of the 1989 knife is just right. The new knife feels too light.The durability of the 1989 knife has been astounding. It has seen heavy daily use since 1989. I never even thought of sharpening it until around 2018. A crack is developing in the 1989 knife blade, thus I bought this new Kiya. 当たり前ですが切れ味抜群です。よけいな包丁を買うよりこれ一本でたいていのことはできます。

何かと便利なこのサイズですが、本当によく切れます！同時に他のメーカーの三徳も購入しましたが、こちらのメーカーで揃えればよかったと後悔するほどです。これからも長く使いたいです＾＾

良い製品です。木屋という「確か、銀座の包丁屋だったなー」と思い出して注文しました。実物が来てみると、見た目の仕上げ、デザイン、使用感、バランス、全てよく出来てます。切れ味も良いです。金額も高級なので良くて当たり前なのでしょうが、日本製の良心みたいのが伝わってきます。
