How good is the non stick coating? Is it as good as the ceramic kind? Ie does it chip off in time?

the non stick coating is superb in my opinion. i have two heavy handed teenage boys who have no regard for delicacy, and it has so far resisted all attempts to destroy it. and they have a lot of experience in destruction of non stick frying pans and panini presses.

Can you use this to grill chicken?

I would not try, heat is on both sides, However chicken would be too thick. Just make grilled chicken sandwiches

Can the plates be removed for cleaning?

Yes they can by hand or in the dishwasher one of its best selling points
