Q: How do you get the lid off to fill?

You need to twist the white part at the bottom of the lid to open the salt & pepper shakers, then you can fill your favorite spices.

Q: How do you wash the square glass version of this shaker set? I'd like to wash after receiving before I add the salt/pepper, but there isn't a way?

Just unscrew the top and wash with warm soapy water, rinse and dry well. The top comes off. Hold the glass firmly and twist by also holding the black plastic part attached to the silver part.
