Primary fermenter, secondary 6 gal carboy, air locks, 30 empty bottles, corks, sanitizing chemicals, siphon tube and hoses, long spoon and patience.

Q: Doing primary fermentation, the 5 gallon top is only placed on top and not closed? I see some comments I need to keep it away from air.

yes please make it as air tight as possible

Q: How long can i leave it in secondary fermernter before bottling?

After degassing and clarifying, I leave my reds in the secondary for a minimum of 6 months before bottling. You could probably achieve the same end result by bottling after a month but by waiting 6 you are assured of not drinking wine before it's time. I only wait 2 months before bottling whites.
