Is the trigger ease enough for kids to use?

Yes. The trigger had to be held or whatever is being picked up will drop. The most important thing I can say about this product is that it is not 19 inches. It’s more like 30 something. I was very disappointed. I need a 19 inch grabber as I keep it on the seat of my walker.

Will this pick up a 16 0z soda size can?

No! The blue coating on the grabber part is rather slippery and anything with any weight to it would slip through. It might pick up an EMPTY soda can, but I don't think that was what you meant. It will not pick up a TV remote or a phone or a coffee mug. It picks up a dropped blanket (not easily) but is pretty much a waste of your money.

how do you make the pole extend?

The pole does extend beyond the stated length (18” I believe). The actual grabber claws do rotate from vertical to horizontal to assist in whatever you are reaching for.
