Are these jars actually 1 gallon plus space for air, or are they one gallon all the way up to the top of the threads?

A gallon up to the bottom of the threads - thus about 3/4 inch space from the top.

Are these jars microwaveable?

There is nothing on the jar to indicate that it is, or is not microwaveable safe. However, keep in mind that these jars are over 10" tall and will probably not fit in most standard microwaves.
