it is best to refrigerate open bottles.

Q: Is this an under ripe/green carolina mash, or something different. how does this compare to the regular/red carolina reaper sauce?

It's red, that's all I know. And having tried almost every type of pepper and hot sauce on amazon, I can tell you this is the hottest stuff out there. It's thick, and hard to shake out, but trust me when I say you want a little amount that you spread evenly. What I did was dump it in a larger mason jar and made it 2/3rds water. Meaning I added this bottle, twice, full of water to a mason jar along with this mash and then shook thoroughly. It is now runny and it is still extremely hot.

Q: Would this be a good sauce to make a martini?
