The media could not be loaded. I have tried this sauce and their Jalapeño Pepper Puree and I will Never be without them. They are so delicious and flavorful. Beautifully designed jars.

convenient ingredient, small jars, consider the salt
The prospect of avoiding stocking, seeding, and chopping peppers is attractive to me. Know this is not 'hot sauce' -- it is 'pepper mash', which is essentially fermented pepper puree. It's handy to just stir in what you want when you want it.The jars are 4 oz, which is a bit small for my purposes. The alternative is a 64 oz jug, which is too large. I spoke to their customer relations and suggested a 16 oz (or perhaps 8 oz) would probably make more sense. There isn't a significant price break on 64 oz relative to 4 oz, which surprised me a little. While talking with them I asked about salt.The product is a ferment, and salt is required for that. I asked what would be a human-understandable way of understanding the salt, like 'for every tablespoon of product, it is XXX tsp of salt.' I didn't really get an answer and I don't know if that's because the rep didn't know it or if perhaps they just would prefer not to say. The marketing literature mentions '... with just a pinch of salt.' Are we talking Andre the Giant pinch, or Tom Thumb pinch?Nerding out, I did a little arithmetic. The USDA asserts that 1 tsp salt is 2.325 g sodium, so we can work backwards.The label calls out sodium per serving (1 tsp, about 5 ml). Interestingly, the different flavors have different sodium levels.* Chipotle, Habenero Red and Orange have 240 mg per tsp* Ghost has 270 mg* Jalapeño has 280 mg* Cayenne has 290 mgSo that works out to about 1/10 to 1/8 tsp salt per tsp of product. (This is table salt, mind you. Kosher salt would be about 30% more because it's fluffy.) There's no standard for 'a pinch' but it's generally taken to be 1/16 tsp, so there are really two pinches of salt.To put this into some perspective, this is somewhat less salty than ordinary soy sauce (330 mg) and a good bit saltier than 'light' soy sauce (175 mg).Scaling for more convenient measurements, and just considering the worst case (1/8 tsp per tsp):1 Tbs product = 3/8 tsp salt (1/2 tsp Kosher)1 oz product = 3/4 tsp salt (1 tsp Kosher)1/4 cu product = 1/2 Tbs salt (2 tsp Kosher)1/2 cu product = 1 Tbs salt (1 Tbs + 1 tsp Kosher)(It's useful to note that the consumer-sized jars are 1/2 cu.)1 cu product = 2 Tbs salt (2 Tbs + 2 tsp Kosher)I think most recipes will call for salt anyway, so knowing this you should be able to compensate in most cases.Upon receipt, I sampled the varieties with a toothpick in the order of chipotle, jalapeño, cayenne, orange hab, red hab, ghost. The heat progressed much as I expected /except/ for ghost which seemed less than red hab. Hmm. Unexpected. Incidentally, they actually produce about 27 different varieties, but those are for institutional customers. But this gamut is a pretty good choice, and I can substitute, say, orange hab for scotch bonnet and be no worse for the wear. I am reaper-curious, but really, what am I trying to prove with that?The consistency is fluid -- not a paste -- though this makes it easier to incorporate. And not having to chop peppers myself means that I will not be made to dance the Tarantella after going to the bathroom and having failed to wash long and hard after prepping.It's stated to be shelf stable, though the jar is marked 'refrigerate after opening'. I think you'll be fine if you go through it quickly enough, otherwise maybe the fridge is a good idea.Recommended; wish there was a 16 oz option.

Great flavor perfect size
Perfect size and amount for a few meals each. Mine arrived bubble wrapped and package well enough to not break like other reviews I have read. Great flavors but they are a little more liquids than I would expect a puree to be. But I still give it 5 stars.

I was really worried about how hot these were going to be, but they really figured out how to concentrate the flavor of the peppers and reduce the heat! I love this stuff. Don't get me wrong it is spicy but it doesn't overwhelm the flavor.

A must have for a "spicy foods" kitchen
Different flavor than cayenne pepper powder - the puree takes food to a whole new level. I have this and the jalapeno puree - love them both. Gave the orange habanero to a nephew - he loves it.
