How many sheets will fit in this notebook?

Short answer: 40 Sheets max. Long answer: It depends on weight of paper. A5 20 Ring filler paper is not that easy to find, but some different weights (= paper thickness) are available from Kokuyo and Maruman. Also too much paper can cause sheets to catch while turning and notebook to not lay as flat when folded back. I use this for a simple portable notebook and like to keep filled with about 20 sheets of "original" Kokuyo 807BT paper.

is this the right size for regular notebook paper in North America?

No, it will not fit letter size paper or filler paper. You need to buy A5 paper with 26 holes for this binder.
