Super cooker - not too fast
Great omelet pan - cooks a tasty omelet, and cleans up well . I cannot turn over an omelet successfully because n a regular fry pan.

Nice one-purpose pan with handles getting too hot
This is one of the products I bought not because I needed them but because I thought I could use them. Often this behavior turns out to be a waste of money - not this time!Making omelette is now so much easier. You just fill beaten eggs in both of the compartments (2-5 eggs total) and put some stuffing on top of one side (make it on the bottom side!). Then you quickly close the lid as soon as the egg starts getting white on the surface and after a few minutes you have a nice omelette.The quality is great - nothing loose, the mechanism closes very tight and the handles are crafted very smooth. Cleaning is easy too because it is well coated. Just take care to not use any metal in it. I find myself not using any tools for the whole process because you can just flip the product out on a plate once it's cooked.The only issue (and other reviewers mentioned it too) why I gave just 4 stars is that the handle (especially the small one) gets super hot. I'm not very sensitive but I cannot touch (open/close) it after a few minutes. I always need gloves/a towel to operate it.

It makes it so easy!
At one point in my culinary career I could sometimes make good omelets. But it was always hit or miss. That's why you haven't seen my cooking show on TV. This pan makes it easy. I use a low heat for reliable results. I will either cook some ingredients in another pan to add to this omelet contraption (say, if I want bacon bits), or lightly braise ingredients in the bottom half of the omelet pan (like onions, already cooked ham, mushrooms etc.). Once everything is added at the right time according to the cooking time needed and lightly braised, or once the bacon is cooked and drained and added to the bottom pan, I add the egg and milk mix to both halves pretty much evenly.The secret is in the timing and the relatively low heat, contrary to what I've read about how to make omelets, to avoid scorching the omelet. Once both sides are almost completely set up is the time to flip it closed, with cheese being added to the bottom part just before closing. Then it's a matter of barely a minute before it's done, without browning or burning the omelet too much or at all. This is on an electric stove (blehhh) but I'd use the same technique even if I still had gas (the best!). I mean, if it was a gas stove, not that I have gas. Really.It's not foolproof but mostly so. I find the big handle does not get hot at all, and usually the small handle is not very hot but I always use a pot holder just in case. For one person I generally use just two eggs and several tablespoons of milk, and that's plenty once I also add a meat, onions and mushrooms and cheese. My omelets now look and taste about as good as any I've ever had professionally. So, an old dog can learn new tricks, especially with a little help from this folding pan.This is one of the better purchases I've made for the kitchen in a while, I'm very happy with it.

Non-stick Teflon already chipped and I just bought this thing.
I bought this last week, only washed it one time. The non-stick Teflon already chipped in two spots. The pan works great except for the Teflon already chipping and going into my food. Which that is known to cause a whole bunch of bad diseases like cancer. The only reason I bought this was cuz it had good reviews but I didn't see anything about Teflon chipping off whenever you first use it. Not sure if this is just a defective one

Nordicware rocks!
This is a fantastic sturdy large omelet pan, the best I've ever used. It cooks eggs evenly and cleans up with no trouble. Highly recommended.
