Would I be able to use these knives in the meat department I work without the health department saying something?

I can't answer that yes for sure as I am not using them commercially. I use them at home. The handles are very hard plastic and so are easy to keep clean. I am very happy with them for cutting meat, poultry and fish at home. They do remind me of the "butcher" knives my boss provided for my use when I was an apprentice meat cutter as a teenager back in the day.

Can you dress rabbits with these?

Sure you can. Just don't use them to cut thru bone.

Where are these made in?

Knives are made in Portugal in JERO's factory. Steel is made in Germany.

Do these come in a case? Do they at least come with a sheath? Thanks

They come in a plastic sheath packaged in a cardboard box. The sheath is flimsy, the knives are sharp and good value for the money. Keep away from kids.
