Very small cakes maybe, because you can only reflect an area the size of the screen. And if you are using a piping bag you will need elbow room and I think the screen would get in your way. Try transferring the image onto your cake written on white tissue paper. Lay it on top of the cake and press in the writing using a plastic toothpick.

The photo needs to be on your phone or tablet. The reflection from your electronic device is projected onto the paper. So, a lighted phone/tablet will have a much better projection than a photo.
