Does this work as a single pole? I searched the manual online, and this 120s model seems to work as a single pole. Yet it has four wires.

It is single pole or 120V AC. The 4 wires are as follows: 2 are for the line voltage and 2 are for the load voltage. The load is the heating mat and line is the power source.

I have double pole and I have two cables and thermostat black and to keep cables white I don’t know which were going on a long visit going to line

Neutral goes with the white and black goes with black positive in most cases.

how accurate is the thermostat? I have an acurite thermometer that reads 68 when the themostat reads 72.

According to the published technical specifications: Accuracy:± 0.9°F (0.5°C). Mine meets spec. The bigger issue may be not knowing that the location of your thermometer is identical to the temperature sensor of the thermostat. Another variable is not knowing that your thermometer is a proven reference.
