Will I get optimal speeds with my aorus gaming 7 z370 motherboard?

Your motherboard website, as previously suggested, will not tell you the best SSD. From what i can tell your board supports PCIE 3 devices. So anything higher than that and its kind of wasted. Optimal speeds is also questionable as it depends on what you have connected to your system. If you buy the PCIE4 storage device and later upgrade your board, then it is going to be great to carry over to the new system. Buying a PCIE3 one will limit you in future... With the caveat that nobody in the real world can tell any difference between PCIE 3, 4 and much less 5. Nothing more than 3 is needed except to set benchmarks on fire.

Do I need to buy a heatsink if yes what heatsink should I get?

Yes. You should get a heatsink that includes thermal pads or paste as the ssd doesn't come with any. The heatsink and thermal pads need to be size 2280.

Do I need an extra thing to mount the ssd like a cable or something?

No it plugs directly into the motherboard, provided that it has an M.2 2280 slot. You may need a screw to secure it in place though if your motherboard doesn't provide any means of securing the SSD like a latch.

Can i replace PCIe 3.0x4 [Samsung] with PCIe 4x4 [SK Hynix] in laptop YOM 2019

I’m afraid I’m not familiar with your laptop. If the PCIe 3.0x4 is the only drive slot you have putting in the SK Hynix PCIe 4x4 ( even if it fitted ) wouldn’t improve the speed output of this drive. Sorry I’m not able to be more helpful.
