what size table do I need & what is the best surface to pin parts, also do I need to buy dope?

It has bee a few years since I have built this model, for me it was re-visiting the models I built a a child (I am now in my 70's). Unfortunately I no longer can find the plans but the model is quite small, so I would think 50 cm square will be OK. I asked the very same question regarding the best type of board to use, without getting a satisfactory answer. I used soft wood ply which i most case was OK, for the pins, better when I found the purpose made bent steel ended pins available in three sizes. I see to remember construction was fiddly, probably my age. Yes you will need dope. Having gone on to make modern wood models there has been great improvements in construction and coverings. To my surprise even the polystyrene models are enjoy to build.

What other equipment/tools would you need to build this? Buying as a gift and want to make sure they can start straight away!

all you need is a pair of scissors and a knife to cut out the pieces, everything else is in the box!

How do I fly this aircraft?

Hello if you bought your model from The Vintage Model Co go to sheet numbers 32/33/34 in the booklet enclosed with the model which sets out the trimming details to be able to fly the RAFSE5a Bi-plane. Other models have their own instructions which differ from each company. Hope this helps.
