Q: How many cupcakes will this hold?

Q: Can I switch the plates so that the smallest one is in the middle? In other words,medium on top, small in middle, big on bottom?

No. The pillars fit on specific size plates and lock into specific holes in bottom.

Q: How many donuts will it hold?

I had the bottom 4 tiers fit 120 Krispy Kreme donuts stacked 3 high for each tier. I would say the whole thing can probably fit around 200 donuts.

Q: Can you use them separately?

No they are all connected to 1 platform and do not have separate bases
