I have a regular contract with verizon for a tab e. Can I just switch out sim cards?

Yes you can switch out your Verizon sim card from a phone or tablet and put it in this tablet. YES. I've done it 3 times in the past no problem. As long as the sim card is already working with your plan you actually don't even need to call Verizon. It will show up. You might want to call if you have or want device insurance and make sure that's OK on the new device. They always just carry that over for me. Or you can use the new sim card. Just go to the Verizon site and it will walk you through. They even have chat and phone assist. No charge. Just make sure you know how to find your Mac nr and IMEI.
