Anthony's products are always great. I'm a big fan and order often. Their vital wheat gluten is my staple. It's got a high protein, great taste and texture profile that I recommend to anyone. The size to price ratio is very good. It is always smooth bodied and not caked together and adds body and good texture to anything I've used it in. It's got the fresh, clean smell of bakery goodness and I don't think I'll probably ever switch to another brand.

Good organic option
In the past, I have developed stomach issues and other symptoms from eating too much bread and seitan. I have read that gluten intolerance is linked to glyphosate (Roundup) toxicity, so I have been experimenting with eating organic bread and gluten for several months and have not experienced the debilitating symptoms that plagued me in the past.Organic gluten is surprisingly hard to find, but I am glad this brand offers an option. Though it is much more expensive than conventional gluten offerings, a batch of seitan using this product is still cheaper than most quality meats or meat substitutes. I do wish that they offered this product in larger quantities, as I go through it quickly making a batch of seitan every week.Seitan "chickmeat" has become a staple for me. I use the "Seitan Chicken (Vegan Chicken Breasts)" recipe from "the hidden veggies" blog, bumping the nooch up to 1/2 cup (I love nooch). Simply blend beans/chickpeas with broth/water and seasonings, then mix with gluten using a stand mixer with dough hooks. Leave the dough to rest for 24 hours in the fridge for best texture, then steam in the instant pot (40 minutes for loaf, less if you split it into nuggets/cutlets). Not bad for a week's worth of "meat"
