They do the job very well
I was planning on buying a crinkle knife with handle but after seeing videos of people using them I thought it would be too unwieldy so I went with these. When I first took them out of the package they felt a little flimsy, not super solid, but they do the job very well, and it's useful that they are quite large so you can just cut whole patatoes with them without having to cut them in half like you have to with those small ones with the palstic handle. Go for it, but don't expect a super solid stainless steell item, you could easily bend these with your hand if you wanted to.
