Great wheat flour
This flour is great. It is different than using regular flour and you may need to adjust liquid and fat to make your breads come out properly, or let it sit in the fridge to fully absorb the liquid. It tastes great though. I mixed 1/4 ratio with my organic flour to make bread. It should work better for cookies and great for coating things. This is a healthy wheat and I like that it's unhybridized, it's easier to digest. My bag was fresh and great, it is quite expensive for wheat which is another reason I prefer to mix, I would definitely order more if it was more affordable.

Worked for gluten intolerant individuals
We purchase this due to it being a heritage grain and some intolerances to gluten. The quality of the flour has always been fresh. This has given us the ability to bake again and not have stomach issues. It works well in varying recipes from breads, cookies, pizza dough, etc. Give it a shot if you have a gluten intolerance, it could work due to these grains not being manipulated as much as current grains.

Good flour, need to reorder
It’s a good flour for bread, tasty. I’ve also used it to make a sourdough starter. Sadly my last delivery didn’t make it intact

Great flour, gentle on stomach, no bloat - but definitely pricy.
Love this flour. Unlike normal commercial wheat, this Einkorn wheat does not make me bloat. It is gentle. o my gut. It tastes great, and I have no issues with flavor profile. It is true the following: It is a stickier dough to work with. It does not rise or develop elasticity the same as normal wheat. I am fine with this. I chose health over performance. This flour is pricy. Due to this, I will not be able to afford to experiment and play as much. I will stick to tried recipes from a book.Americans have put aside health benefits for the sake of performance. I choose nutrition, substance, and benefits over "food arts". Food arts, have gotten Americans fat, unhealthy, and lazy. Sure the typical American foods look structured, bright, colorful and with saturated flavors...but at what cost. That's my soapbox.

Good quality product BUT expensive...
Expensive but great product.Bought this to make healthy, homemade, chemical-free sourdough bread. Unfortunately, while I always look to buy Made in USA products, it seems that almost all US-produced flours and grains are filled with glyphosates and have diminished nutrients.This flour worked great but took more than 1 package to make a single sourdough loaf -- makes for an expensive loaf.

Pricey, but worth it
As others have said, Einkorn is extremely pricey but it is worth it. Whether it is bread, pizza crust, or even tortillas, this flour tastes exceptional and is worth every penny to be healthy. It's easy to work with and best part is that it doesn't result in stomach issues. Why can't the US get on board with these health standards?

About a year ago, I tried to make a sourdough starter. It may have been partly because my kitchen was flooded with yeast particles from all the failed starters, but as soon as I bought this exceptional flour, I was able to create a finished starter and a genuine loaf of sourdough bread. Great taste!
