Good alternative
These are good if you are on a low carb or keto diet. My husband missed his baked treats so I tried these and he enjoyed them.

Add the oil as you stir
Taste great, but requires a lot more oil than necessary. The batter is very greasy when you mix it. I will buy it again, but this time I'll use avocado oil (good for not changing tge flavor) so I don't have to melt the geehe, and add it until the dough is the proper consistency.

Another review said cook at 400 for 18 min and I highly suggest doing that. Worked perfect for me. I also added about 1/3 cup extra almond flour and a 1/4 cup Lakanto allulose sweetener for a denser more muffin like texture.I put 3 blueberries in each cup and got 12 amazing muffins. I also made a keto streusel on top with almond flour LK sweetener and some butter. So yes, I basically just made my own muffins from scratch but it’s a great keto base that can be made amazing!

Dear Lakanto: What are you thinking?
I bought these spur-of-the-moment today in order to meet the minimum for a pick-up at Whole Foods. My husband has diabetes and a quick review of the label told me that they would/should be very good for him. Back in the day, we used to love the Martha White Blueberry Muffin mix (still available for less than $1!) and perhaps because I found that these muffins don't actually contain blueberries but flavor bits, I was deluded enough to think they might taste as good as those, even lacking actual fruit. I'm experienced making scratch cakes with almond flour so assumed I'd have no problem. I measured carefully and baked them slightly higher than center in the oven.First, they don't really fill up a dozen normal muffin cups. I filled just 11 for any kind of normal muffins should have filled 9 or 10. Second, I baked them at 325 for 15 minutes, then 18, then 21, then 24. Still white and gooey on top. Then I cranked up the oven to 350 and baked them for 30 minutes. Still not in any way golden brown, but I took them out. At that point I tasted one and made a batch of cornbread and that's what we had for dinner.The muffins were not good. No taste of blueberries or even artificial blueberries in that delicious Martha White way. And they weren't quite sweet enough. More than anything, I tasted a slight flavor of egg. So disappointing because I thought I'd found a new, reliable mix.Our raccoons are thoroughly enjoying them as I type.Footnote: I tried making Lakanto aware of this but because I purchased through Whole Foods/Amazon, they consider it a third-party purchase and would not refund. I reached out to Amazon, however, and received and immediate refund.

Moist and flavorful and not a sugar bomb...
Ok so these are keto muffins so maybe slow down you expectations a touch. That being said, these are awesome! They are moist and flavorful! They yield 12 muffins, unless your expecting big muffins. Again...these are keto muffins, they aren’t going to come busting out of the pan! Much better than High Key (their products are awesome, except the blueberry muffins). A little expensive, but let’s face it, if your buying keto friendly fun foods, your paying a premium and you know it so don’t pretend to be surprised! Overall excellent product! Also when it comes to sweetness, when you eat low carb, keto and the like, there is an expectation for foods like this to be sweeter...because your used to sugar! If you stay true to your reduction of sugary foods, these types of foods will taste sweeter as time progresses. If your constantly crossing over to sugar foods while eating these types of foods, you will always be disappointed because your body wants sugar and is going to expect that level of sweetness.

Great as a treat
Let’s be honest, no Diabetic/low carb/sugar alternatives are going to taste exactly like the flour/real sugar version - but this will give you a sense of having a traditional blueberry muffin with the added protein. It’s quite dense, to be expected with the amount of eggs, which doesn’t bother me. I’m type 2, this is my first time trying this mix out and I really like them as a treat. They’re just sweet enough and I can have one paired with a protein as a snack, or have two as part of a larger breakfast, it so far satisfies that craving of wanting a muffin and won’t take up too much of my limited carb count. I hope they come out with more flavors. I’ll definitely repurchase. It’s rather expensive for what it is, but nice to have when you want something quick and don’t want to spend time searching the internet for recipes and your pantry for ingredients to make from scratch.
