Perfect for Pretzels 🥨
We purchased this to be used when baking soft pretzels when the recipe calls for a lye bath. It works really well and helps to create a chewy crust and a deep, caramelized color on your pretzels. It's easy enough to use that we allow our teenaged daughter to use it when she bakes after given the proper safety instructions and being supervised the first few times. The bottle arrived intact and well sealed. The childproof cap works as it should and the label includes clear safety instructions.

Food Grade NaOH for making pretzels
A pretzel, especially a soft pretzel, gets its deep dark exterior by a short soak in a high pH bath. Though sodium bicarbonate or sodium carbonate would work, sodium hydroxide works best.I use 40g of this food grade sodium hydroxide in 1,000g (1L) of water (1M solution) in a plastic container. Wearing plastic gloves I carefully give each fully risen soft pretzel a 30 second soak before placing on a parchment lined baking tray and baking. They come out beautifully browned and crusty on the exterior and soft and chewy inside. This product comes in a sturdy plastic bottle that is non-reactive and is air tight. If exposed to the air for any length of time solid sodium hydroxide will absorb carbon dioxide and convert to sodium carbonate. This has not been an issue so far with this product. Finally, its physical form is such that as a free flowing granules, it dissolves easily and completely.

Works, but has a shelf-life
Works as advertised. Unfortunately, the bottle is large and I was hoping it would last me at least 2 years or so. However, as other have warned, this product has a self-life and appears to gradually diminish in potency no matter how well you store it. I was careful to keep my sealed well and stored in a cool, dark place. Yet, it still got weaker. By my estimate, it weakens to about 65% of what it was after a year.

My go to for pretzels!
This is great if you like to bake a good tasty brown crusted bagel or bagel bread, it lasts forever, always measure water first and the add the powder to the water, that way you never have a too concentrated solution that could risk burning you! The product is great, I’ve baked a lot of pretzel bread with it and I’m not even half through it, so the prize is great for the amount of
