Q: Widest width of dough that can be sheeted is 180 mm equals 7". Is this correct maximum width??

Yes mine is exactly 7” but I use mine for polymer clay. I’m presuming that if my clay can get clogged behind the rollers, than dough will as well. They aren’t easy to clean but you can strip them down of excess metal and win over half the battle. Google YouTube “dismantling a pasta machine for polymer clay use”.

Q: Could this machine work for laminating croissant dough?

I believe it can. I have never done it but there is a how to on Pinterest. Hope this helps.

The crank handle is black plastic, and the crank is chrome. Remember, there are no attachments for this unit, and although I love it, I would not purchase it again.
