Q: Can the ceiling vents be zipped closed?

Yes (zipper), actually it's a good idea at night because the dew will drip on the seat below, unless you use the rain cover. The vent works good during the day letting the heat out bringing cool air in under the door like a chimney. Tip, if you hang a light pointing down from the middle top you won't get any shadows. You're invisible.

Q: How tall is the privacy shelter to the top of the pole structure? I am thinking about using it inside another tent...

It's pretty tall - I can't say exactly, but I'm 6'4 and can almost stand up fully inside of it. I would guess it's at least 6 feet tall- probably wouldn't recommend putting it inside of another tent because you'll want to stake down the 4 lines in order for the privacy shelter to be able to hold a full shower bag without collapsing.
