Can this be used to melt chocolate like for cake pop?

Yes. This product holds half a bag of melted candy melts

Does this unit maintain a proper temperature or does it get too hot at times?

It is too small to maintain an even temperature. Our truffles and also when we did cake pops were chilled and after dipping a while the temperature dropped. It is fine for small jobs. If you wanted it for larger jobs you would have to get a bigger one.
