What is the shelf life of this product? I don't drink coffee often but want it to last :-)

It is sealed really well, so I would assume it lasts indefinitely if stored properly (the jar is glass, with a perfect foil seal). Once opened, it depends on how much moisture you let in, as with any other instant coffee. My father in law has had a jar for over a year, and it tastes perfect.
