A lot of citrus flavorings taste rancid to me, but this has a very fresh lemon scent. I've used it in frosting, cranberry sauce, pasta water (brightens up the pasta), and other things. It's not super concentrated as to be overpowering, but just about right. I used a 1/4 tsp in a batch of frosting and it was perfect. 3-4 drops in the pasta water (usually I add 2-3 "shavings" of lemon zest), 4-5 drops in Hollandaise sauce, 2-3 drops in a cocktail. I will definitely purchase again. Which might be sooner than I thought, since I 'm finding ways to use lemon I never did before. Very pleased with this product.
