Q: Is this 18/10 or 18/0?

Q: If this get too hot can it explode like the older type pressure cookers or does the top loosen on it's own like other waterless cookware?

NO, I don't think so. The top has a sort of movable red tab that you slide to how much you want the top to be open, or closed completely, so you can adjust it for your needs. This is not a pressure cooker. It's just a pot with an adjustable open/closed top. Hope that answers your question. I've never used it waterless.

Q: Can anyone tell me if you have ever used this pan the same way as offical waterless cookware pan made for that purpose?
