Which way round do they go onto the filter i.e. does the stripy side face downwards or upwards or does it not matter?

Stripe side down so you see it because the stripes change colour when it is time to change the filter again.

Can this be used to replace the metal filter?

I don’t know because we haven’t had a metal filter. I don’t see why not. Metal filters would need to be cleaned and put back, but these grease filters need to be changed periodically.

Is it safe to touch? I have wilko universal filters that burn the fingers. Yes they provide plastic gloves, but i forget to put them on.

I’m not sure why you’d want to touch the filter. It is placed inside the cooker hood to filter out grease from cooking on the hob. I never try to change it or do any cleaning until the unit is cold and certainly not during or just after using the hob.
