Fantastic paring knife, good blade size and shape, and nice large handle. The handle is quite large for the size of the blade so if your looking for a small paring knife this might be a bit big. Other than that it’s a great little knife, the plastic sheath is also a nice little addition.

I rate on bell curves. 3 is AVERAGE. 5 is exceptional. This knife is a bit below average, even for cheap knives. I love good knives, but for some tasks I don't want to use a $300+ white-steel knife I have to oil after use. Sometimes I WANT to use a cheap knife I can run through a quick sharpener and throw in a dishwasher. This looked to have the right shape and a nice handle for a cheap knife, so I gave it a try. Well, it is well-shaped. Handle and blade are well-shaped, and the guard it comes with is nice. It washes easy and has no rust/staining. That's about the best I can say. Plastic parts have unpleasant seams (which will wear down eventually) and edge-retention is sub-par, even compared to cheap clamshell-pack Walmart knives. After a dozen small-time uses - like trimming strawberries and trimming fat from chicken - the edge is dull and there's a burr on the blade I can't seem to get rid of. If it can't hold an edge against such light-duty tasks trimming strawberries and chicken fat, it doesn't deserve any praise.

I wanted a set of these so bad, however the knives i received are not made of VG10. They are a cheaper shun line made of aus8a. Amazon needs to update their description.

I was really hoping that the edo line would be a good choice for some Shun knives. On receiving these I immediately noticed that the blade is etched AUS-8, NOT VG10 as described. They look good, but are a little too shiny and flimsy. The bevel on the edge isn't cut well, and it isn't as sharp as I'd heard the Shuns would be. Also, this line is discontinued so I can't even get a complete set now! There are also a number of defects and tool marks on the blades, which at $50 each just isn't acceptable. These are going back, I'll try again.

Same as my other reviews of this KAI series of knives. GREAT blade for the price, and simply a great blade. Make sure you have a ceramic rod/steel to re-hone the edge.
