Q: How loud does it get? Is it really a deal breaker?

Mine doesnt get loud at all, i have it in the nr200.

Q: If Purchased on Jan 8th, will you receive the revised model with the better fan curve?

I purchased one on January 30th 2021, and there was no annoying fan curve. I could barely hear it ramp up even with my ear right next to it.

Q: How to tell which one is the new 850v sfx vs the old one? Can anyone tell me.

As per a bunch of reddit posts from within the last month, the "new batch" is also loud. Supposedly that was the only reason for the recall of the first batch and I never saw any posts about them failing, so it could just be them doing qc. That being said, I had CM's 650v sfx running in an nr200 with a 3600x, 3080FE, and 240rad, and it was pretty quiet. Even under load I could never hear it over my cheap headphones. Though supposedly the 750 is also supposed to be a bit noisy, I just swapped mine with the 750v sfx and I find it's also quiet. Depending on your system, you should see if you could get away with 750W. Also check for CM's reddit posts. They have someone who responds pretty often there. If I see something I'll reply again.
