Yes, it's totally fine to open the capsules! Many of our customers find success by mixing the powder with tomato, cherry or kimchi juice... spicy kimchi juice is my personal favorite. If you go with the cherry juice, you can buy the juice, or do what I do at home... I mix a few organic frozen cherries with raw local honey, spring water and desiccated organs, blend, gulp and wipe face. Everybody in the family seems to like this one! Another idea is to mix the capsule/s with food that you are eating... for instance, I know many customers that mix our products with ground beef and ghee.

Q: Should I keep these in the fridge?

There's no need to refrigerate any of our products but it won't hurt much either. Cold temperatures help food stay fresh longer. The basic idea behind refrigeration is to slow down the activity of microbes (which all food contains) so that it takes longer for the bacteria to spoil the food. Our products are freeze-dried using a sublimation process to remove the moisture... this type of sublimation dehydration removes 98-99 percent of the moisture content. This leaves virtually no moisture; since microbes (viruses, bacteria, parasites etc) can't survive without moisture, this allows for an ultra pure product profile with a very long shelf life — of course, with no need for additives or preservatives. Studies have shown that freeze dried foods maintain their purity and nutritional value for up to 25 - 30 years! However, to better adhere to our small batch philosophy, we print an expiration date on the bottom of each bottle that is 3 years out from the date of encapsulation and bottling. Most refrigerators produce higher moisture inside than the outside environment. For this reason, we suggest storing our products in cool, dry area such as a cabinet or cupboard.

This is why I source 100% of our organs / glands from New Zealand. Ancestral Supplements headquarters out of Texas... this is where we call home. I love the people here and I love the land.

Have they been tested for heavy metals?

Yes, we do test for heavy metals, and we have several data sets from 2012 to current (see below)... all levels were well below the "safe for consumption" range. You are likely aware that we produce one small batch at a time to ensure freshness, higher quality and attention to detail... this includes 3rd party testing all products to ensure purity and product specification. 
     
There are several studies that have evaluated heavy metal levels in the organs and muscle meats of healthy cows. All levels were well below the "safe for consumption" range. What's more is that many instances showed heavy metals were higher in the muscle meats than in the organs. If one were to avoid these traditional, nourishing foods in fear of heavy metal exposure, then one should avoid the rest of the animal, too.
  
Based on the testing we have done historically, we have established that our products are pure. All values are in parts per million (ppm).

In 2012 we tested beef liver on 2 separate batches and found the following... 
- Lead: 0.047, 0.041
- Arsenic: 0.11, 0.14
 
In 2013 we tested 4 different batches of various organs and glandulars from our Beef Organs and found the following...
