Yes. It can work for electric reels. Rated up to 40A, it exceed the ampere rating for most reels.

What is the largest wire size this connector accept? 8 awg?

10 gauge is the largest it will take

Can I use Minnkota 112lb 36V?

The recommended circuit breaker for this trolling motor is 60 amps, the plug is 40 amps. I don't think it will work.
